GRUB is a bootloader - it is designed to be small and is designed to... Boot operating systems. - You can also them GRUB already - making this redundant.

GRUB should adhere to the principle of KISS. Keep it simple stupid.
People seem not to understand what a bootloader is.
Bootloader should be a minimalist program that does as little as possible, before it passes control of the system to the kernel.

OK. But I want no white text 'Kernel is loading...' on a black background at every start of my computer. What is to do than?

Since at least a few releases, the only text that it displays before the splash screen is "Starting up... Loading, please wait...". That's the expected behavior. Either you're using an old version or there's something wrong with usplash.

usplash isn't writing this text, isn't it?

No, it's not. I don't think usplash has anything to do with it despite what I said earlier because in any case I don't think it should appear prior to any messages regarding loading the kernel. What version of Ubuntu are you using?

As the others have said, this does not have anything to do with GRUB, but with usplash. It is possible to have those messages written on the usplash screen: with Startup Manager (not installed by default) you can specify that you want to see the messages on the splash screen (they will appear below the logo and progress bar).
It doesn't look very pretty, however. Fedora 8 has a much better looking graphical boot screen. It would be nice if Ubuntu's boot screen would be as nice as Fedora's.
