I'd recommend working with http://nuigroup.com/ to integrate multitouch concepts into the OS in order to make it fit for the next generation of multitouch interface devices.
Oh, there was a Google Summer project (iirc) for multitouch in X11. It has been waiting for merging into trunk or something like that. X11 also supports zooming already, it's just a matter of small patches.
That's incredibly sexy, but how many of us have the hardware to support that now? How likely is it that that hardware will become common in five years' time?
Don't mistake me: if the software was ready and I had the money, I'd pay $$ for the hardware right now. I really want this. But I wouldn't know where to go. And if I wouldn't I doubt the Ubuntu target audience ("an OS for normal people", or whatever) would, either.
So, I'm giving this my +1. But this has to be a "blue sky, maybe one day" project.

I'm going to guess most of you do. All you need is a cardboard box, a piece of something clear like acrylic, a sheet of paper, and a webcam. This will get you going and allow for testing.
