Well after reading the recent, soon to be changes to Ubuntu 11 I was hoping to throw my two cents in there.

Solution #1: Options during instillation

Why not have it when Ubuntu is installing, it asks you which office suite and music player you would prefer? It would please both sides, and would probably allow this to expand to something bigger. Such as selecting which GUI you want.
