Mencoder for video, and I use Audacity when I have to convert between audio formats (thankfully, not that often, as the process takes a bit longer than it needs to). There are plenty of GUI tools out there for encoding videos, and just as many for changing the format of audio. Why reduce the options? Having one preinstalled would just add more space, and anyone who needs one should know enough to use the Apt-get GUI to install one.

avidemux ;)

avidemux is not enough... This often is to hard.
1. select file
2. Select output format
3. Check codecs to convert (sugest to install if patents and licences are ok)
4. Convert.

And no more.

Else advanced options...?

Avidemux is not simple. mencoder is not simple.

When you use these programs, you very quickly have to deal with a lot of very highly technical terms that have to do with audio and video codecs, formats, parameters etc.

Use case: One of my friends is a guitar player. He gives me a DVD with a video of a concert where he played. He wants me to cut a few songs from the video and put those on YouTube.

Currently, I have to use a DVD ripper program first and then Avidemux to cut out the songs. Then I have to save the movie in Avidemux. To save it, I have to choose a video codec and an audio codec. I have no idea what codecs are best for uploading to YouTube, and how I should configure those codecs. So I just choose something at random.

I agree that there should be a SIMPLE video / audio conversion tool that has a number of presets. For example a "YouTube" preset, or a preset for a portable device, etc. I don't want to become an expert in video and audio codecs to use this application most effectively.

I agree with shovelhead - Soundconverter (for audio) is fantastic. its easy to use, well-integrated, and powerful. File and folder conversion. Add in a video companion and you're set.

People who transcode deserve death.

Only encode from a lossless source.
Never transcode from a lossy source.

Avidemux2 for video

Sound converter is awesome you can even drag a .flv (or other video files) from Youtube and it converts only the sound of it, it's fantastic
