People leaving a message don't realize how it will appear when it's received, though, and won't think to sign it.

Of course you can, but no one will. The person leaving the message doesn't realize how it's going to appear to the user receiving the message. So you add an extra field for their name to encourage them to leave an attribution. Otherwise they won't think of it.
