I believe it's more natural for the officers application the white background since all them come from procedure made on real paper (in the most of the case it's white). But the office apps use the textbox colour for background and also for the letters, and it can give a bad aspect to default documents.
I agree. The document on-screen should appear the same as the document on-paper. Using, say, a white-on-black theme makes the document on-screen have white text, but this prints off as black. Using coloured text becomes more difficult, since the difference between Automatic and a set colour might not be noticable on the screen but will be on page.
