We are working to bring Ubuntu to be used by a quadriplegic child and we believe that the process is not intuitive enough.
We need a head tracking software to control the mouse. Ubuntu includes gnome-mousetrap in the repositories, but is not compatible with our cameras. We found Eviacam:

We need to install some packages manually to make it work. We are familiar with the installation of packages and even, if necessary, by compiling and installing software from source code. But we know that manual installation and configuration can be a tedious process for most users.

Unity can search through most recent document, video or even help in suggesting results for shopping by using lenses. Presently, Gnome (as provided in Ubuntu Gnome distribution) can not do this. If this feature is implemented in Ubuntu Gnome it may be helpful in bridging the gap the interface that two Ubuntu distro provide.

I feel that the future of currency will be mostly digital. We are conducting transactions online with various devices more and more, and some people even get their groceries online. I think we need to better complement this method of business.

Develop an API for software wallet manipulation, and add a control panel in the system settings. This control panel acts as the main GUI to do simple tasks like send money, look the transaction history, register financial accounts for Bitcoin Wallets, Google Wallets, PayPal, etc. Through other programs (such as the Software Center or a web browser) you would access the API to send and receive money. By extension this would enable other developers to more easily integrate commerce solutions for paying, donating, and managing money in both an on and offline way.

if you type something into a text box often, it should be remembered, so the next time you start typing in the item, it will show a dropdown of suggestions, which you can navigate with the up and down keys, and auto-fill in the text box with the suggestion with the right key. (most things like this would use the tab key to do this, but the tab key is used to go to the next item in a website, and will frustrate people if it is also used to auto-complete a word.)

New users find it difficult to see which was the previously selected option once a dropdown list is clicked.
Users feel that the previous selection is lost and they have to select a new one. They try to memorise the previous selection before even clicking a dropdown because of the fear that it will be lost once they click the dropdown. I think there is something seriously wrong here.
To have a way to check the ink level of printers

Right now there is no way to watch easily the level of ink remaining in the printer. One of the things I like about Ubuntu is that I have one software to administrate all the printers, which works perfectly except for the fact that there is no easy way to check how much ink is remaining unless you install the propietary solution for that, if there is one.
Nautilus bookmarks and Dolphin places synchronization

Using both gtk and qt apps (nautilus and kate in my case) would be way more convenient if the bookmarks synced automatically.
These files would have to be watched:

After using the terminal emulator TN3270 Plus a few years back, I have been missing the copy-append function on every computer I have worked on.
It is a little function, but it works really well in some work environement.
If I need to paste 10 pieces of data in a IM window (eg.), I have to copy and paste them individually.
With copy append, I would copy them individually and then paste them all in one go.

On a broader approach, copy-append could handle files too, but at this point a deamon to control and give an overview of the clipboard would be needed.
The deamon should run a system tray icon, hovering over it should give you a preview of what is stored in it.
The deamon should also notify user when he tries to append incompatible data (eg. text and files).
It could also have a simple GUI, where the user can define if he wants the function to be on, and what he wants it to handle (text, pictures, files and folder tickboxes)
On a broader approach, copy-append could handle files too, but at this point a deamon to control and give an overview of the clipboard would be needed.
The deamon should run a system tray icon, hovering over it should give you a preview of what is stored in it.
The deamon should also notify user when he tries to append incompatible data (eg. text and files).

I thought of an even broader appoach:
a system-wide box where you can temporarily store drag&drop and copied(ctrl+c) content with preview categorized by kind. like text, formatted text, files, images, ...
copy, paste and cut should behave as usual but should be kept in a history of defined length.
to combine selections there are 2 options: a hotkey eg: ctrl+shift+c/x the second time or open the dropbox and select 2 items of the history and press ctrl+c/x
hotkey suggestions:

paste the next item: ctrl+shift+v
paste first item in history and then delete it and select the pasted: ctrl+shift+z
show dropbox: holding ctrl+shift until mouse is over it

1. Possibility to tell the daemon that this is the application/file I will want to copy to. This could be just a shortcut key e.g ctrl-alt-z and pressing this key combination would tag file as "active" for the daemon.
2. If some file/application is tagged as active then all copy operations are put to a database along with information on where the data was copied from. This would make it possible to search relevant data from different sources and collect the data/source information to database
3. If pasted normally (ctrl+v) just the latest item would be pasted. If user selects alternate paste e.g. ctrl-alt-c daemon would open clipboard editor window in which user could search data with
A. To file, e.g. what file was tagged active before copy operatio.
B. Free word search
C. From location, e.g. where data was copied from
4. Further this could be developed by adding a "project" tag to database so that copy operations could be tagged to specific projects.
